MaxxLive
MaxxLive is an ethanol emitter — the latest active packaging technology from Japan, developed for foods that lose quality easily to microbial growth because they have a relatively high moisture content (water activity > 0.6), such as bakery and confectionery. Food-grade ethanol is released in a controlled, balanced way inside the package. Beyond preventing microbial growth on the food surface after processing, it also preserves soft texture by slowing starch retrogradation.
MaxxLive is made from high-purity food-grade alcohol produced by fermentation from natural raw materials. It is designed to release a small, continuous, controlled amount so that equilibrium is reached inside the package at the lowest ethanol concentration capable of inhibiting microbial growth (microstatic). Residual ethanol in the product is therefore very low (< 1%) — safer than using chemical preservatives. The use of ethanol in baked goods is classified as GRAS (Generally Recognized As Safe), since yeast used in baking naturally produces alcohol, and ethanol is already added to some baked goods such as fruit cake to extend shelf life.
How does MaxxLive extend shelf life, and why release ethanol?
- MaxxLive releases alcohol in a controlled way to maintain equilibrium inside the package continuously, so it stops microbial growth effectively throughout the shelf life. This works better than spraying alcohol directly onto baked goods, because sprayed alcohol soaks into the product immediately — requiring large amounts (leaving a strong alcohol smell) while still not extending shelf life as well as controlled release.
- MaxxLive keeps confectionery texture soft by slowing starch retrogradation, so bread and bakery products do not dry out, harden or become tough.

Usage recommendations
- MaxxLive only inhibits microbial growth, so products must already be processed to have a low initial microbial load.
- High gas barrier packaging is not required, but the package must be sealed tightly — for example, heat sealed.
- Can be used together with BestKEPT or with nitrogen flush packaging.
